Lasagne | Lasagna
Step by step description of a delicious lasagne recipe with home made Béchamel sauce and pasta that's big enough to feed the extended family.
Ingredients
2kg mince half beef half pork
150g bacon
4 carrots
3 onions
100g celery root
2 cloves of garlic
200g mushrooms
500g passata
1 Tsbp tomato mark
350ml stock
250ml red wine
400ml milk
salt, pepper
400g flour
4 eggs
salt
150g butter
150g flour
1L milk
100g parmesan cheese
100g emmentaler cheese
nutmeg (optional)
salt, pepper
Method for Meat Sauce
- Dice bacon into small pieces and place in a cold pot over medium heat. 
- Cut carrots, onion, garlic and celery root into large chunks, place in food processor and process until finely chopped. 
- Once bacon has rendered fat add finely chopped vegetables into the pot. 
- Once vegetables have cooked for about 10 minutes add mince to the pot and brown. 
- Add tomato mark and cook. 
- Deglaze with red wine. 
- Add milk and cook until milk has evaporated. 
- Add beef stock and keep cooking till half of the liquid has evaporated. 
- Add Passata and same amount of water to the pot. 
- Stir in mushrooms and herbs. 
- Bring to a boil, turn heat to low and let cook for two hours. 
- Meat sauce finished! 
Method for Pasta
- Add salt to flour and mix. 
- Pour flour onto a work surface. 
- Form a well in the middle of the flour and add eggs into the well. 
- Mix and knead to a smooth dough. 
- Cover dough and let rest in fridge for 1 hour. 
- Roll out dough into square sheets. 
- Cut sheets into the size of your pan. 
- Pasta done! 
Method for Béchamel Sauce
- Melt butter in a pot. 
- Add flour to melted butter and mix. Continue mixing over medium heat for about one minute. 
- Slowly add milk and keep whisking till all milk is added and sauce is thick. 
- Add cheeses, salt and pepper. 
- Béchamel sauce ready! 
Layering Lasagne
- Butter baking dish well. 
- Start with meat sauce. Then pasta. Meat sauce again. Then drizzle Béchamel sauce. 
- Continue layering pasta, meat sauce and Béchamel sauce till pan is full. 
- Last two layers should be pasta and Béchamel sauce on top. 
- Sprinkle cheeses over the top and let sit for one hour. 
- Preheat oven to 200 degrees Celsius. 
- Bake Lasagne for 30 minutes oder until brown on top. 
- Take out the oven and let it cool for about 25-30 minutes before cutting.
