Krautstrudel (cabbage strudel) with Ham
Cheap and easy meal with cabbage. Make your own strudel dough with a tasty filling.
DOUGH
Ingredients
200g plain flour
100ml warm water
1 tsp salt
1 Tbsp vinegar
2 Tbsp oil
FILLING 
Ingredients
1 cabbage finely sliced
150g ham roughly chopped (optional)
100g bread cubes or crumbs
80g butter
parsley
1 tsp caraway seeds
2 tsp paprika powder
1 Tbsp vinegar
1 Tbsp sugar
oil
salt, pepper
Method
- Add salt to flour and mix. 
- Pour out on work surface and make a well. 
- Slowly add the warm water to make a shaggy dough. 
- Add vinegar and oil and knead till smooth. 
- Coat dough with oil, cover and set aside to rest for 30-45 minutes. 
- For the filling heat oil in a pot and add sugar. 
- Cook till lightly brown then add ham and cook it for 1-2 minutes till crispy. 
- Start adding cabbage hand by hand till it cooked down a bit. 
- Add caraway seed, paprika, vinegar, salt, pepper and stir till mixed in. 
- Close lid and let it cook for 10 minutes and set aside to cool. 
- In a pan heat butter and brown the bread crumbs and set aside to cool. 
- Preheat oven to 180 degrees celsius, fan forced. 
- Roll out the dough on a parchment paper to a rectangular shape. 
- Mix parsley with cabbage and spread out on the dough. 
- Evenly spread the bread crumbs over the cabbage and roll dough till closed. Use a little bit of oil to make it easier to seal. 
- Seal the 2 ends and coat Strudel with oil. 
- Put Strudel on sheet pan and put in the oven and cook for 30-35 minutes. 
- Put Strudel on a rack to cool for 10-15 minutes before cutting into it.
