Crispy pork belly with braised red cabbage and bread dumpling
How to make your pork belly skin super crispy. In this video we show you one of Mark`s most favorite dishes, including a pork belly, braised red cabbage and traditional Austrian Semmelknödel (bread dumplings).
Ingredients
1,5 - 2 kg pork belly
salt, oil
red cabbage (1 head)
2 red onions
3 apples
1 Tbsp sugar
4 Tbsp vinegar (sweet)
200 ml apple juice (100% Apple)
salt, pepper
oil
500g bread cubes
300 - 350 ml milk
2 onions
2 eggs
a handful of parsley
salt, pepper
oil
Method
The night before line a backing dish with salt and place pork belly skin side down on top of the salt. Place another heavy dish on top of the pork and set in fridge overnight.
Remove pork from dish and wash salt off with fresh water and dry well with paper towels.
Score skin with sharp knife (or box cutter). Be careful not to go to deep just through the skin and not into the meat.
Place pork on a rack and put in the middle of a cold oven. Then set it to 150 degrees Celsius fan forced until the pork is cooked internal temperature of 70 - 75 degrees Celsius).
Once pork is cooked turn oven on full and put the pork as close to the element on top of oven and keep an eye on it.
Remove pork once the skin has puffed and crackled.
Let the meat rest for at least 15-20 minutes before slicing.
For the braised cabbage slice cabbage in small pieces and peel and dice onions.
Pour oil in a large pot and add onions. Cook till they are translucent.
Add sugar, salt and pepper. Once sugar is melted add cabbage - a couple of handful at the time.
Once cabbage looks glossy add more salt and grated apples, vinegar and apple juice.
Bring everything to a boil. Then turn it down to a simmer.
Cook for about 45 minutes to 1 hour with the lid on.
For the bread dumpling peel and dice onions. Cook in a pan with oil till translucent. Set aside to cool.
In a bowl combine bread crumbs and milk and set aside for 10 minutes.
Add, parsley, onions, salt and pepper and mix well. Set aside for another 10 minutes.
Wet your hands and form balls.
Bring salted water to a simmer and add dumplings. Cook for 10 - 15 minutes.
Remove dumplings with a slotted spoon and they are ready to serve.
